QUESTIONS AND ANSWERS TIME
Q. May we know you?
My name is Agu Ngozi, and I am the proud owner of DAGS Foods. At DAGS Foods, we are passionate about creating healthy and nutritious meals that are deeply rooted in our local traditions. Our products include MUMMY SUZY’S PAP, a home-sourced maize cereal, as well as bean flour, fish powder, soya bean powder, and more. As a biochemistry graduate from the University of Nigeria, Nsukka, I bring a scientific approach to ensuring the quality and nutritional value of our products. And as a mother and a wife, I understand the importance of providing wholesome food for my family, and I bring this same dedication to every product we offer. Q. What inspired your business?

When I had my first son, when it was time to transition to solids and semi-solid foods, we struggled greatly. I tried lots of cereals in the market. Funny thing is, I started with all those foreign foods because based on my understanding then, I wanted only the best. He rejected them all, pheww! One day, my sister was taking a Golden morn and offered it to him and he took it, my relief lasted only for a while because upon further research I found the brand clearly stated that their products were for children three (3) years and above, but small oga was just six months. Well, I kept trying till I discovered my son is just a local man, hahaha.

Then the search for the perfect akamu started, just believe I spent good money for nothing. I complained to a friend who recommended someone, I went to her place myself, and I was satisfied with the level of hygiene but the product however was lacking. I started making my baby’s food myself. By the time I had my third baby Suzy, I was already an O.G in pap (akamu) making. My friends and family would always ask when I will process her food, so they can come and grab some.
Fast forward to when she was about ten months old, people would always approach me to ask what I fed her, and you can imagine their shock when I say it is akamu, our very local akamu/pap/ogi/koko. I would explain the process of making mine to them and the feedback was massive.
One day, I had an epiphany that I could actually meet so many more people’s needs if I did this as a business.

Q. You have been mentioning Pap/akamu for a while now. What is Pap/akamu?
Pap, also known as “akamu” or “ogí” or “koko” is a staple in the Nigerian diet made primarily from fermented corn or other grains. It is rich in carbohydrates, providing quick energy, and also contains proteins, folic acid, and essential vitamins and minerals. Pap is traditionally prepared by fermenting, grinding, and cooking the grains into a smooth porridge. It is commonly enjoyed as a breakfast dish, either sweetened with sugar and milk or paired with savory accompaniments like akara. Beyond its nutritional value, pap holds significant cultural importance in Nigeria, symbolizing comfort and tradition in family and festive settings. It usually makes it to the breakfast Menu every Saturday in most Nigerian homes.

Q. Who are your target audience?
Pap/akamu/ogi is one meal that cuts across different age groups, from 6 Months to old age. The beauty of it is, it can be customized to suit these different age groups. Pap can be adapted to suit various dietary needs, such as gluten-free or vegan diets, by using alternative grains or plant-based milk.

Q. What benefit does your pap/akamu offer?
Pap offers a lot of benefits and there have been studies to support this. I will share a few with you.
- Regulates Blood Pressure: Pap’s high potassium content and zero sodium help maintain stable blood pressure and prevent hypertension.
- Lowers Cholesterol: Packed with chromium, zinc, and magnesium, pap reduces LDL cholesterol, lowering the risk of heart disease.
- Supports Nursing Mothers: Pap boosts breast milk production and aids in post-illness recovery due to its high water content and easy digestibility. Mummy Suzy’s Pap has a special lactation to further support new moms..
- Boosts Energy: As a carbohydrate-rich food, pap provides sustained energy and supports mental sharpness.
- Easy to Digest: Pap’s gentle nature aids digestion, making it ideal for those with sensitive stomachs or recovering from illness.
- Promotes Kidney Health: Pap helps flush out toxins and waste, promoting healthy kidney function.
- Supports Pregnancy: High in folic acid, pap supports healthy pregnancies and helps prevent neural tube defects.
- Ideal for Babies: Pap is a nutritious, easy-to-digest weaning food for infants, providing essential nutrients for growth and development.
Conclusion: Pap is more than a simple dish; it’s a nutritional powerhouse that supports overall health for everyone, from infants to adults.

Q. What does pap processing entail?
The process begins with selecting high-quality grains such as corn, millet, or sorghum, e.tc which are thoroughly cleaned to remove dirt and impurities. The cleaned grains are then washed and soaked in water for 2-5 days to ferment, depending on the grains used because the grains have different fermentation duration. Fermentation is a crucial step for developing the distinct tangy flavor and enhancing nutritional value, without fermentation, there is no Pap/akamu/ogi/koko.
After fermentation, the grains are ground into a smooth paste, sieved to remove chaff, and left to settle, allowing the starch to separate from the water. The clear water is decanted, leaving the thick starch, which is then mixed with water to form a slurry and cooked in boiling water until it becomes a smooth, creamy porridge. The cleaning and fermentation steps are vital as they ensure the purity of the grains and develop the essential flavor and nutrients in the pap. This nutritious porridge can be enjoyed hot with sweet or savory accompaniments, making it a versatile addition to any meal. DAGS Foods package and sell the paste after draining the excess water. We also process the paste to powdered form for convenience.

Q. How has your entrepreneurial journey been?
Hmmm, the truth is that I have had a lot of ups and downs in this business like many other businesses in Nigeria. The first challenge was that at first, it was just borne out of passion and the desire to provide a solution to my fellow struggling mums, there was no proper planning, I just started from my kitchen.
As my customer base expanded, with so many referrals and having so many international customers, I just knew that it was finally time to seek for extra hands. I had to employ and we kept growing, having customers from major cities in Nigeria. We are also looking to expand, so we have to go back to the drawing board. Whilst we keep satisfying our existing customers, we are currently working behind the scenes to accommodate more customers both locally and globally.
